Almond Financier Sprinkled with the SPICY MAPLE SUGAR MCHEF

  • 250 ml (1 cup) of icing sugar
  • 125 ml (½ cup) of pastry flour
  • 125 ml (½ cup) of roasted almonds in oven at 350 °F (180 °C) for 8 minutes for roasting taste
  • 4 white eggs
  • 125 ml (½ cup) browned butter
  • 30 ml (2 tbsp) of the SPICY MAPLE SUGAR MCHEF
  1. Preheat oven to 350 °F (180 °C) and place rack in center. Using buttered muffin tins or silicone molds of all shapes to your liking.
  2. In a bowl, mix all the dry ingredients and set aside.
  3. In a strong fire stove, melt the butter. Wait until the butter melts and foam. Then butter will turn golden-brown and that is when it is time to remove butter form the stove to avoid burning. Pour butter directly into the bowl.
  4. Stir with a wooden spoon. This mixture will form an oily paste.
  5. Then add the egg whites and stir with a whisk until a homogeneous mixture.
  6. Pour the mixture into the molds and bake for 25-30 minutes until the financial have a golden brown color. A nice crispy flake on the surface and ultra-moist in the center of cupcake. A wonder!
  7. Sprinkle SPICY MAPLE SUGAR MCHEF over the little cakes.
