Quinoa & Sautéed Vegetable seasoned the ISLANDS MCHEF Way

  • 1 sweet onion (white), chopped
  • 125 ml (1/2 cup) of quinoa
  • 180 ml (3/4 cup) of chicken or vegetable broth
  • 1 medium carrot, peeled and cut into small dices
  • 1 branch of celery, cut into small dices
  • 1/2 leek, finely minced
  • 1 red pepper, cut into small dices
  • 15 ml (1 tbsp) of the herbs from the ISLANDS MCHEF
  • 15ml (1 tbsp) of vegetable oil
  1. Pour the quinoa in a strainer and rinse well under cold water. Drain and set aside.
  2. In a small pot over high heat, drizzle oil and add the quinoa. Stir and add the broth. Bring to a boil. Cover and cook 15 minutes over low heat.
  3. In a large skillet over high heat, drizzle oil and sauté the vegetables with the herbs from the ISLANDS MCHEF. Place the quinoa and vegetables in a dish! Delicious as an accompaniment with meat, fish or vegetarian stews! A sweet healthy alternative!
