Smoked Salmon Tartar with the herbs from THAILAND MCHEF

  • 12 slices smoked salmon of your choice
  • 15 ml (1 tbsp) capers, chopped
  • 5 small sour pickles chopped
  • 5 ml (1 tsp) sweet pickle relish
  • Zest and juice of 1 lemon
  • 1 shallot, finely chopped
  • A handful of parsley and dill, chopped
  • 5 gr (1 tsp) of the herbs from THAILAND MCHEF
  • 80 ml (1/3 cup) crème fraiche or sour cream
  • 5 ml (1 tsp) olive oil
  • Decoration of alfalfa and 4 purple orchids
  1. Mince the smoked salmon and place the salmon in a bowl. Add chopped capers, chopped pickles, and a teaspoon of relish, the herbs from THAILAND MCHEF, lemon zest and juice.
  2. Add the finely chopped shallot, parsley and dill. Drizzle olive oil. Adjust seasoning with salt and freshly ground black pepper but beware, the capers are salty, so do not add too much salt!
  3. On small cold plates, gently press the tartare at the bottom of a circular cookie cutter and add over it the crème fraiche and some caviar if you wish! Add a tiny handful of alfalfa and a pretty purple orchid on top. A real treat! Enjoy!
