Almond biscotti dipped in chocolate with the SPICY MAPLE SUGAR MCHEF

Ingredients
  • 125 ml (1/2 cup) softened butter
  • 250 ml (1 cup) granulated white sugar
  • 3 eggs, beaten
  • 5 ml (1 tsp) vanilla
  • 680 ml (2 3/4 cups) pastry flour, sifted
  • 250 ml (1 cup) blanched almonds, coarsely chopped
  • 125 ml (1/2 cup) semisweet chocolate chips for dipping biscotti
  • 45 ml (3 tbsp) candied orangettes, chopped
  • 10 gr (2 tsp) of the SPICY MAPLE SUGAR MCHEF
Préparation
  1. Preheat oven to 325 °F (175 °C) and place the oven rack in the oven.
  2. In a blender at medium-low speed, beat butter and sugar until the mixture is pale and light. Add eggs and vanilla. Stop the operation of the mixer and remove the bowl.
  3. Add flour to the mixture and stir with a wooden spoon. Then add the flour and mix softly with a wooden spoon. Add the almonds and mix again. Make a nice ball of dough, cut it into three equal parts.
  4. Flour a large cutting board to work the balls of dough with a rolling pin, shape the rectangles dough and remove them on baking sheets lined with parchment paper.
  5. Bake for about 30 minutes so that the dough is cooked. Once cooked, cool it down for 10 minutes.
  6. Place the rectangles of dough on a cutting board and slice the dough 1 inch thickness to make biscotti. Place them on two pastry pans lined with parchment paper. Make sure to space them.
  7. Bake on the top rack of the oven and dry the dough at least 15 minutes on each sides. Then let biscotti cool down for 10 minutes on pastry grill over the counter (to take off maximum of humidity).
  8. Melt chocolate in microwave over low-medium intensity for 1 minute, and stir gently with a spatula or wooden spoon. *We have to be careful not to overheat the chocolate because it can burn very quickly!
  9. Dip biscotti into chocolate and sprinkle candied orangettes and the SPICY MAPLE SUGAR MCHEF. That is when the magic starts!
  10. Let the chocolate harden at room temperature preferably in a dry and cool place. Chocolate does not like moisture or heat. Avoid refrigerating! Serve in a nice service platter and treat yourself and the ones you love!
  11. Enjoy with a cup of expresso, Oolong tea of camomile herb tea!
