Caramelized Scallop with the SWEET DESSERT SPICE MCHEF

Ingredients
  • 12 large sea scallop (size U8), deverned and pat dry (3 scallops per person)
  • 125 ml (1/2 cup) of sugar
  • 15 ml (1 tbsp) of water
  • 1/4 of lemon to squeeze its juice to stop caramelization
  • 5 gr (1 tsp) of SWEET DESSERT (PUMPKIN) SPICE MCHEF
Préparation
  1. In a small saucepan over medium-high heat; cook sugar and water between 8 to 10 minutes or until golden without stirring and reaching a temperature from 340 °F to 350 °F with a candy thermometer.
  2. Remove from heat; carefully add few drops of lemon to stop caramelization. Sprinkle with the SWEET DESSERT SPICE MCHEF and with a silicone spatula. Leave aside.
  3. In a large non stick skillet over high heat, add a drizzle of oil and 2 knobs of butter. Sear scallops 30 to 45 seconds on each side according to the thickness of the scallops. Then pat dry and place them onto warm serving plates.
  4. Spoon caramel over scallops. Serve with a lemony maches salad and enjoy this savory meal with a glass of sparkling wine or champagne! What a treat!
