I am excited to share with you my very best brownies recipe. It’s the taste of my childhood. It’s the recipe that I used to make with so much joy as a child and of course, I still bake these brownies to get an extra chocolate sweet treat! Make it today! All ingredients are basic, you may have everything you need in your pantry! Celebrate the joy of baking!

Preparation time: 20 minutes

Baking time: 35-40 minutes

Cooling and Frosted Icing: 45 minutes 

Servings 2 dozen of small brownies bites 


  • 1 ½ cups (3 sticks) of salted butter, soften, ambient temperate 
  • 1 1/2 cups of granulated sugar or swerve 
  • 1 cup of pure dark cocoa powder 
  • 2 ounces cream cheese
  • 4 eggs, beaten
  • 1 cup of flour or for a gluten-free version : 1 cup of almond flour + 1/2 cup of multi-usage gluten-free flour 
  • 8 oz. of chopped bittersweet chocolate

Frosted  Icing:

4 oz. of chopped dark chocolate 

2 tbsp. of powdered sugar

1/3 cup of heavy cream, warmed

1/4 tsp of the MCHEF® GRANDMA SWEET PUMPKIN SPICE to pimp up the taste! Wouah!

1.Preheat the oven to 325 degrees and place a rack on the lower third of the oven. Line a 13-inch by 9-inch baking pan with parchment paper. Lightly grease the foil.

2.In bowl, whisk  the butter and sugar. Add eggs. Whisk: Add the cacao powder and whisk until obtaining an homogeneous texture. Then add the cream cheese into the mixture. 

3.Add the flour and stir vigorously with a wooden spoon until the flour is fully incorporated and pulls away from the sides of the bowl.

5.Pour the brownie in the baking pan and place in the oven. Leave the baking pan uncover and bake just until a toothpick inserted in the center comes out slightly moist, 35 to 40 minutes. 

6.Let it cool down for about 45 minutes. Remove the parchment-lined brownies from the pan.

7.Over a double boiler, or using a microwave-safe container, melt the the chopped chocolate, powdered sugar and the heavy cream to form a ganache. Place the ganache in a piping bag, or a sealable plastic bag with one of the corners snipped off, and drizzle the ganache over the brownies. Sprinkle with candies! Playtime! Cut and serve immediately. The brownies will keep, covered and refrigerated, for up to 1 week. Bon appétit my dear friends! Enjoy the best old-fashioned brownies to celebrate the day!
