This amazing snack recipe is full of flavors à la Provençale! Little bites for the guests. Sip on a dry sherry or other dry wines; very light and crisp white wines can balance the olive's flavor too! 

4 servings / 15 minutes


1/2 cup (125ml) of pitted Kalamata olives

1/ cup (125 ml) of pitted green olives

A little zest of an orange and a lemon to enhance the tastes!

1 tsp (5 g) of the MCHEF® SOUTH OF FRANCE or you can also use MCHEF® PROVENCE if you already have it in your pantry!

Chopped fresh herbs: coriander, mint and parsley

Drizzle of cold-pressed extra-virgin olive oil


Mix all the ingredients in a bowl and serve. Enjoy them in happy hour! A burst of flavors!

Is it healthy to eat olives? Olives are very high in vitamin E and other powerful antioxidants. Studies show that they are good for the heart, and may protect against osteoporosis and cancer. The healthy fats in olives are extracted to produce extra virgin olive oil, one of the key components of the incredibly healthy Mediterranean diet.

Are olives healthy to snack on? My research shows that olives are a good source of biophenols, a kind of antioxidant that prevents the accumulation of bad cholesterol in artery walls, she says, making them a heart-healthy snack. The way that most of us eat olives—cured and fermented—can also be quite salty.

My favorite olives are: Green Castelvetrano, Cerignola olives, Picholine olives, Kalamata olives, Moroccan olives and Queen olives, miam!
